From what I can remember as a kid that this was always one of my favorite types of sandwiches. They can be taken to picnics, barbecues and parties or made to eat on a hot day if you want a quick lunch if you feel like you are too lazy to cook. It is very fast and easy to whip up and they are rich in protein. Here is the reason why I call it a very grown up egg salad because the reason why is because of ghost pepper sauce. It is so hot that really one drop is sufficient. You don’t need anymore. This is my favorite hot sauce.
Now to recipe. This is so basic I will tell you what I did to make this. I boiled 3 hard boiled eggs by putting the eggs in the sauce pan and adding water enough to cover the eggs. When the water boils set the timer for ten minutes, I suggest you use an egg timer or the timer on your microwave this helps a lot too. When the eggs are done cooking I drain the water and the eggs in a colander. My suggestion is to use any type or color of onion you want, I switch up at times because eating the same thing all of the time can get pretty boring. 1 onion if it is a small one. 1/4 of an onion if it is large or 3 green onions. 1 pinch of dill weed (optional) 2 stalks of cellery (optional). 1 pinch of chivies (optional).
For those that love pickle relish and want to add it this is optional. I add 1 tiny drop of ghost pepper sauce (optional).
At times I add 2 tbs of mayonnaise or 1 tbs of mayonnaise and one tbs of mustard.
I peel and chop the eggs and add my choice of onion and this goes by what i have a taste for. If I want to add any one of the optional ingredients I add those too except for pickle relish. I really detest sweet pickles but for those that perfer it and want it then add it.
From here we are done and ready to put it on any type of bread we please to make a nice sandwich. Some want to put lettuce and tomato on their sandwiches like my husband. That is ok too as long as anyone gets max enjoyment from this recipe then I am happy.
