This is one of my favorites on a hot day and it won’t steam up your kitchen. There are 2 options which is the most labor intensive is to grate a bag of carrots by hand on a grater also called a knuckle shredder. Another method is food processor which make it an absolute breeze and comes with a grating attachment. You still need to cut the bottom ends of the carrots peel them with a potato peeler, wash and cut them in to small pieces so they are easier to handle.
Trust me I am not lazy and I am entitled to feel this way as much work as I do in my own kitchen. I prefer the food processor over the knuckle shredder any day. We folks from the old school calls graters the knuckle shredder because if you don’t watch what you are doing you can get a quite a bit of an ouchie. So pay close attention please!!!!!!!!??????
After the peeling, washing and cutting the job is a breeze and you are ready to get to work. This requires few ingredients and it is so basic. Just grate the carrots in a food processor because it is much faster and you can get done quicker.
If you don’t have one get one and it will be your best friend in the kitchen when you need it and it doesn’t have to be expensive either. The ones between a 20 to 30 dollar price range will do nicely. I don’t know how much they cost elsewhere so please feel free to leave it in the comments below on how much they cost elsewhere. Take the grated carrots in a bowl. Above all means necessary grate the whole bag that is enough. Add 4 tbs of mayonnaise, 2 dashes of balsamic vinegar, again it doesn’t have to be expensive it gives a very nice taste and enhances the sweetness of the carrots. Add half of a fresh pineapple cut in to chunks. The bark you can use for making zobo and the rest can be made for using it for chat which is like a salad or you can use it for making sambar and rasam which are Indian dishes. Zobo is a hibiscus drink. Add raisins to the carrot mixture. They can be either golden or sultanas as they are called or black raisins or a combo of both.
There is no need to add sugar because the carrots raisins and pineapples are already sweet.
Add nuts either pecans, walnuts, pistachios, almonds or hazel nuts, the nuts is optional.
