One day This one lady who is from the My Active Kitchen blog posted what she made on Instagram. I don’t remember if it was akara or moi moin.
Actually I got the idea on how to make red lentil moin moin from her and I said, “Oh wow!!!! There are other cultures that uses this delicious lentil. Ethiopians use it for some of their wots (stews), The turkish eat it also they make a soup and make a kofta from it and it is a staple of every Indian and Pakistani dish.
Ok now it is time to soak 1 cup of the red lentils for 3 hours to overnight. I have put 1 cookingspoon of olive oil in the pot and added my 1 minced onion and stirred to caramelize, I added the 1 pinch of turmeric and 1 green chili chopped for a less intense or mild misr wot stirred on low heat. I added 1 bullion cube, 3 dashes of maggi or knorr aroma, or for more spicy and robust by adding single use only of berebere and niter kibbeh and the lentils I had washed and soaked. I stirred and added 1 qt. or 1 liter of water to the lentils. Add also simplified maklesha which is purely optional. I covered the pot and cooked until the lentils were very soft. It is about 45 minutes. Instant pot method is on sauté function add the oil and fry the onion or shallot then add the spice mixes and maggi or knorr aroma bullion cube the spicy butter and the red lentils and water then switch to pressure cook function on high for 20 minutes.
When the lentils are tender and there is some water left take the lid off and cook it down until it is semi dry and enjoy with injera.
