Oh my God this is so yummy and this is down and out right divine. Everywhere I see though does not make it the way I do and so I am giving it to you the halal version of shrimp grits
I have in a pot I tbs of olive oil. I chop 1 onion or 1 shallot or 3 green onions and 2 cloves of garlic that I had chopped and brown them a little then I add 3 cups of boiling water and to this I add 1 bullion cube and 3 dashes of maggi or knorr aroma.
I bring it on low heat and I add 1 lb or 1 kilo of shrimp I had cleaned. I add 1 green chili or 1 drop of hot sauce. Bear in mind I have ghost pepper sauce. I add 1 cup of grits and let them cook for a few minutes or until it is done. To finish I add 2 handfuls of cheddar cheese and stir right away so it can break up and melt everywhere.
That is it done with this recipe and now dig in. P.S. My youngest daughter doesn’t like her shrimp and cheese grits in this style. Her way is to add corn oil instead of olive oil. Fry the shrimp in the oil, remove from the pot. On high heat boil water then add the required amount of grits, add 3 dashes of lemon pepper, 1 pinch of pink salt. Cook until the grits are cooked and water is absorbed by the grits. Add the shrimp back to the pot and add 1 handful of cheddar cheese and reduce to low and stir until the cheese has melted.
She is a picky eater I have to appease her. So either enjoy it my way or hers. Also,if you don’t want to use cheddar cheese; you can use any type of cheese that is to your liking.
