Here for this recipe I made a fried rice dish. The protien of choice is either mixed seafood like crab, shrimp and pieces of firm fish, I would use chicken, sausage or hotdogs, a can of halal zabiha lunch meat, kidneys, liver, gizzards, tongue, beef, goat, veal and lamb.
Onion choices are 3 green onions, 1 type of these following onions are vidalia, red, yellow, white and brown. Also 1 shallot. Add 2 cloves of garlic and either 1 habenero or scotch bonnet deseeded.
My vegetable choices would be bell peppers, mini sweet peppers, peas, carrots, corn, orka and mixed vegetables.
My rice choices are short grain, long grain, basmati, jasmine rice, and white or brown rice.
I took anywhere from 2 to 4 blue crabs and 2 cups of water then boiled them with 1 bullion 4 sprigs of fresh thyme, 1 pinch each of red chili powder, paprika, 2 pinches of curry powder and 3 dashes of maggi or knorr aroma for 10 minutes. I took 6 handfulls of white short grain rice and washed it to get all of the starch out then added 1/2 gallon of water or 2 liters of water and taken the crab out and put it on the plate and added the stock from boiling the crab with the seasoning in it then set the rice on high heat to boil then turned the burner down to low and covered the lid of the pot with either a banana leaf or aluminum foil and covered the pot to let it cook for 20 minutes or until the rice has absorbed the water. I check the rice to see if it is soft and give it a stir. I put the lid back on the pot and let it stand for another 20 minutes.
While waiting I had some mini sweet peppers. I wanted to use up so I cut them in small pieces.Then I got a wok and a extra pot. These don’t take long to cook plus I had some breaded okra I wanted to get rid of You can use just plain frozen okra too if you want.
I rinsed the wok and put it on high heat until it got very hot then added 1 cooking spoon of peanut oil I didn’t have to mess with the crab anymore. If using liver, fish and other seafood, gizzards, kidneys, chicken, beef, lamb, veal, goat please cook it ahead of time. For liver, kidneys and fish needs to be fried first if you are using. Do not forget to clean the liver and kidneys by using 2 tbs of kosher salt and cold water and changing and straining as you go by using a colander. Then add 3 tbs of white vinegar and more rinsing to remove the blood and smell after you remove the membrane and the white parts from the kidneys and there are some tough unsavory parts in the liver too.
I added the vegetables of choice I was using which were the mini bell peppers, 3 green onions chopped, okra and the rice and I fried it. I kept doing it in by batches like this and putting them in the spare part until there was no more left repeating the first step as I go.
I leaned how to do this by watching All Nigerian Recipes’s video on her blog. This is what made me want to try it and this is how it came out and I really enjoyed it.
