This is my favorite to put over gnocchi and it is a yummy addiction for Mr. Riaz. He was complaining that I would try out other people’s recipes and what not and now he is aware that other people are trying out mine too. Besides it makes me feel good to give back by becoming a food blogger. Even though I had talked about me surviving child abuse and the ones who abused me were a bunch of lying hypocrites.
Another thing I want to touch bases on I know and I am aware that food can be an addiction just like anything else out there. Mr. Riaz thinks sometimes I live to eat not eat to live. I said wait a minute I love food yes but I am disaplined enough not to let it control me. I told him straight out that I am a foodie yes not a glutton.
Actually he doesn’t want to admit it that he says he hates food but I know better. Really he loves food too and doesn’t want to admit it. Enough of the chatter for now I am going to show you this easy dish.
I put in a mortar and pestle 1 pinch of black pepper corns and ground them. I added 1 pinch of sage and rosemary and bleneded it with the now ground black pepper. I took out the pestle and added 1 pinch each of marjarom, 2 bay leaves, thyme, basil, oregano and chili flakes. I mixed everything and added 1 pinch of cinnamon.
Let me tell you why I add cinnamon. I do it because it cuts the acid in the tomatoes. Most add sugar in their sauce but I do not I will tell you flat out I hate it. For those that do want add 1 pinch of turbinado sugar, (optional).
I added 1 cookingspoon of olive oil to the pot and added 1 onion or shallot I sliced in to half moon slices. and caramelize them on high heat. I added the mixed herbs and spices I made up in my mortar and pestle, 3 pinches of vegtea seasoning/ or I would add 3 shakes of seasoned salt. I stirred and added 1 tomato I had chopped 5 cloves of garlic chopped,and let it cook down to a mush and turned the burner on low heat. I added 1/4 tsp of water so it does not burn. I added 3 dashes each of balsamic vinegar and maggi or knorr aroma and stirred. I washed and added the chicken to the pot and cooked it for 30 minutes.
The optional vegetables to add are: mushrooms, eggplant, zucchini, Italian yellow squash and green bell pepper only. My choice was 1 green bell pepper and I also added 1/2 to 1 whole can of tomato paste and let it cook for another 20 minutes and at this stage the chicken will be done completely and the sauce becomes thick.
