I also blog hop Indian blogs to get idea on what to make for dinner and I am giving you my version of sambar masala without further adiu.
I added to the wok to roast 1 pinch of rice, it can be any type of rice, urad ki dal or mash ki dal, moong ki dal, toor dal and chana ki dal then I added 3 curry leaves, 1 pinch of hing, 1 pinch of decsicated coconut or grated coconut and 1 small pebble size of tamerind. After I roasted them then I grouned them and added them to a bowl.
Then I added to mortar and pestle 1 pinch each of fenugreek seeds, coriander seeds, cumin seeds, black pepper corns and mustard seeds and ground them in to a powder. This part I do not roast and I deem it unnecssary. I mix that up with the roasted lentils mixture that I had ground up and add 1 pinch each of red chili powder and turmeric and I crush with my fingers 1 whole dried round chili.
These you get in any Indian and Pakistani grocery store and they are not scotch bonnets at all they are a differnt type of chili. It is a round dried red chili and that is all I can say it is. I Googled it also and it said the same thing I am saying. As for the rest of the spices to make up this masala can be found also at Indian and Pakistani grocery stores.
