I recently got a bag of banku flour from the store. They sell them here in Chicago where they sell African groceries. We have a numbeer of African stores here in the city. I was looking at this bag of banku flour and I decided that I would give it a go and try it out.
However the instuctions is on the bag is made for stove top only but cleaver me I managed to make it work for the microwave. This can be eaten with any thype of soup it said and it is fermented. It is a blend of corn and cassava flour. I checked the bag just to make sure. 😀 lol…….
I added 1/4 cup of banku flour to a microwave safe bowl and added two cups of water. I added a little at a time to prevent it from forming lumps while giving it a brisk stir.
When it was a thick batter like I put plastic wrap over the bowl and stuck it in the microwave for 2 minutes. I took it out removed the plastic wrap and flattened it on my work tray and emptied the contents on to the plastic wrap, just making sure it ended up in the middle. I folded these ends of the plastic wrap making sure I have a tight ball and placed it back in the bowl seam side down and placed it again in the microwave for another 2 minutes.
At this stage it is now ready to be eaten with any soup. The plastic wrap can be removed and the benku is nice and firm at this point and can be eaten. Please enjoy.
What does it taste like? It is sour and however if you do not like the taste of injera this is not for you. It has the sourness of injera and that is why I am making the comparison.
