One day I seen Nma Okpara’s aka The Nigerianlazychef’s post on Instagram that I made a comment on about cornmeal swollow. She told me how to cook it on the stove and bring the water to a rolling boil. However I have tried that before and it came out pretty mushy like slap pap that is from South Africa. I am going to cover some South African dishes later on in this blog. I had to do something because that method did not work for me.
However I have microwaved it and it came out a lot better and it came out in a nice ball of dough. It is the same way when I make fufu that it sticks all over the pot and I am wondering what am I doing wrong. However in microwave I have had better results and it steams itself.
I added 1 cup of white or yellow cornmeal to a microwave safe bowl. I added 3 cups of water and made it in to a batter type consistency. It did not have a lid so I covered it with plastic wrap and cooked it for 2 minutes in the microwave. When it was ready to come out I took the plastic wrap off of the bowl and laid the same plastic wrap that I had covered it in the first stage of cooking. I laid it flat and emptied the contents on to the plastic wrap and then wrapped it up while forming it in to a ball.
I found out this is really working for me and it looks much neater. I placed it back in the microwave for another 2 minutes and from here I can enjoy this with any type of soup that I wish.
