I was wanting to try something new again and this time again I did it. It is called bean pottage. Any bean can be used for this dish, even chickpeas. Kindly exclude lentils because they are too small and it just won’t work so it has to be a larger bean.
I washed and soaked 1 cup of these beans for 2 hours to overnight and on medium high heat I cooked them in 1 quart or 1 liter of water in a pressure cooker for 20 minutes after the safety button goes up. When time is up I turn the stove off and wait for the pressure to completely release. They taste very similar to peanuts and I love them. They are called bambara beans.
I added 2 tbs each of palm oil and peanut oil. I sliced either 1 onion or 1 shallot in to half moon slices and fry until they are golden or I would add 3 green onions cut in to tiny pieces. I add 1 bullion cube, either 3 dashes of maggi or knorr aroma, 2 cloves of garlic and 1 chopped green bell pepper. I stir and add either 1 habenero, or 1 scotch bonnet, or 1 pinch of red chili powder. I would add either 1 pinch of shreaded or dessicated coconut, 1 pinch of crayfish, 1 handful of frozen corn, 1/4 cup of water stirr and add 1 tsp of tomato paste.
I let the sauce thicken and for optional that I would add 1 can of titus sardines in oil.

This is the suggested serving along with my lovely fish stew that I had made. I even cooked white rice as a side dish to go with this. Please refer to my recipie on how to cook plain rice called jasmine rice etc. link I am going to post below.

Today I also found something perfect to go with this dish. It is called Goya malta light. This has Splenda in it instead of sugar. I think as you know Splenda is suposed to be made from sugar but it really is a sugar subistute made from sugar. Well I have tasted it and I really like it because when I gave up white sugar for good that I had to give up my malta too as well.

Here it is. I just could not help myself and it tasted very good with my meal and there is only 90 calories and it was great with my meal. Need I say more? Goya is not paying me to advertise their products. Seriously it would be nice if they paid me to indorse their Goya light. This would be really nice. 😀
