This is one of my favorite dishes of all time and I am going to share this recipe with you. The vegan option uses liquid smoke instead of smoked turkey. Turn on the burner on medium high heat.
However I like smoked turkey with mine and it gives it great smokey flavor. In a pressure cooker I added 1/4 cup of olive oil, 1 onion I caramelized, 2 cloves of garlic and 1 tomato I had chopped and cooked it until it becomes mushy. 1 shallot can also be used instead of an onion. Add 1 big green bell pepper or 2 small ones, 1 pinch of black peppercorns in the mortar and pestle and ground in to a coarse powder and added to pressure cooker.
Stir and add 1 tiny drop of ghost pepper sauce or another type of hot pepper sauce or 1 pinch of red chili powder, 3 dashes of maggi or knorr aroma and 1 bullion cube mashed, 1 bag of frozen crowder peas, 3 dashes of liquid smoke for meatless or 1 lb of unsmoked meat such as veal or lamb necks, chicken, goat with liquid smoke added or 1 smoked turkey piece, 2 liters or 1/2 gallon of water and stir.
When the stafety button pops up, turn on the timer for 20 minutes and turn the burner to medium low heat. When time is up turn off the burner and let the pressure escape from the the pressure cooker. When the pressure is gone, open the cooker and check the beans and smoked turkey. It is nice and soft at this point and I tasted it and it is so yummy. For instant pot and the like turn on sauté on high add oil and chop up either onion or shallot and cook like you do with stovetop pressure cooker.
Add the garlic, tomato and let tomato turn mushy, chop the green bell pepper and stir. Add the seasonings and the liquid smoke. You can add the unsmoked meat at this point or leave it vegan or veg. Omit this if you are using smoked turkey. Add crowder peas and water and the sauté function should be on high for 7 minutes. If your cooker isn’t shutting off on its own then select cancel. Place the pressure cooker lid on and select pressure cook on high for 20 minutes. Make sure it is on sealing position. Repeat if the beans are a little tough then it should be nice and soft. Also be sure to check your liquid levels too.
Enjoy with rice, hot water bread or cornbread.
