Oh my God I really love omelets. They are super duperly delicious and so easy to make.
I cracked two eggs in a bowl and beat them with a fork. You can also use a whisk or eggbeater if you prefer.
I heated up my cast iron skillet on high heat and shut off the burner then sprayed with cooking spray to give an even coating.
I turned the burner back on and added the beaten egg to the skillet. I took my pot holder and grabbed the handle and rocked the skillet until it was evenly coated at the bottom with egg.
It is similar to how you are making a dosa, crepe or injera. When it is dry at the top add your chunks or shredded cheese of your choice.
Add siracha or other types of hot sauce of your choice. This is purely optional. For a pepper fiend like myself, this is an option of my choice.
