When I got off the plane I started to crave African food and I mean badly. This recipe Is simple and quick. I looked up a pin on pinterest that I have that came from Wives Connection blog which inspired me to come up with this recipe. This is very basic and nothing fancy. Also any type of brown bean dried or frozen can be used. I used butter beans for this dish that was frozen. If you are using dried, add 1 cup of dried beans and let them soak overnight in 3 cups of water. Drain them and set them aside.
In a pressure cooker add 3 tbs of red palm oil, 1 onion or shallot chopped, brown the onions or shallot. Add 2 cloves of garlic and cook it until the rawness goes away. I put in a blender 1 scotch bonnet or habenero chili and 1 chopped red bell pepper and blended it. I added 1/4 of a cup of the sauce because I was also making jollof rice to go with this dish.
These beans was a side dish to go with my jollof rice which is featured on this page that I did the jollof pasta rice and bulgar recipe for Jollof Spaghetti Or Pasta, Bulgur And Rice.
I added 1 bullion cube, 3 dashes of either maggi or knorr aroma, 1 pinch of crayfish and 1 liter or 1 quart of water to the pressure cooker.
I cooked the beans in the pressure cooker for 20 minutes after the safety button popped up on medium high heat. When time was up I turned off the stove and let the pressure release on its own. When the safety button is lowered carefully open the pressure cooker. The beans was nice and soft and tasty. If you do not want to eat it with jollof rice, spaghetti, pasta or bulgur as a side dish then you can add 1 packet of haka noodles that are plain and cook it until they are soft or add some rice to cook In the juice of the beans and cook until the rice is done by bringing the rice to a boil and then reduce the heat to a simmer and cover the lid with aluminum foil and place over the pot for 20 mintues.
When the rice has absorbed the liquid and kind of soft, turn off the burner and place the foil lined lid on the pot for 20 minutes and then the rice is ready to consume. This is just in case you do not feel like eating jollof rice.
