Sorry I have not been blogging for a long time and I really miss blogging and trying out new recipies. I was back in Peshwar, Pakistan visting my family.
While I was there I was told by a couple of family members that they read my blog posts. I said Oh My God, Wow!!!!!!!!!!!!!! I was also under the weather when I was there because of anti malarial pills which I would never take again ever in my life ever. I am back in Chicago now and I am tired from the flying. I am still recovering from jetlag but I will be ok soon.
This dish I have made on my second night back in Chicago and this is totally my recipe. It can be spicy or mild so the choice is yours there is no right or wrong way on making yummy baked chicken.
Preheat the oven of 350 F or 180 C. You can use any part of the chicken you wish. There was legs available in the house so I wanted that and I wanted something simple because I am very exhausted from my trip. The plane ride was very long. I took Emirates from Chicago to Dubai and from Dubai to Peshawar. Dubai Airport is very lovely and the food on Emirates was great. Ok I got sidetracked here and it is time to get back to the recipe, lol my bad.
I took all of the chicken legs and washed them. I added 2 cookingspoons full of olive oil and added it to the roasting pan. I added the washed chicken and seasoned it with 3 dashes each of lemon pepper and seasoned salt. I added 1 pinch of black pepper corns to my mortar and pestle and ground them coarsly and added it to the chicken and added 2 cloves of garlic in the mortar and pestle and ground it in to a paste constancy and added it to the chicken and rubbed the seasoning in there. I put it in the oven for 3o minutes then turned it and put it back in there to bake for another 30 minutes.
The pieces were kind of big so I baked it for another 20 minutes or until the chicken is done. You can also add seasonings like mixed herbs, paprika, the mixed herbs can be random. They are rosemary, dill, parsley, thyme, sage, tarragon, marjoram. It can be made in to a random mix and added to the chicken (optional).
I had some juice left over from the chicken so I used a package of haka noodles in there. They have the brand name of chings. Cook the noodles until soft. I added 1 drop of hot sauce or chili paste which is optional also.
