I looked up on how to make danwake. This is my first crack at it and I am telling you on how I did it. However I have been cross referancing my pins again via Pinterest. Plus there was one African store I went to so I can go purchase some boabab powder which is one of the ingredients. I also found out it is similar to making the Italian gnocchi and it is very delicious.
First make Suya Paste. Recipie is link is on the right.> Suya Paste < or buy store bought suya spice and set it aside.
In a small mixing bowl, I added 1/2 cup of bean flour. You can buy it at any African store. I used the one that is used for making moin moin. You can also use besan which is chick pea flour. This is sold at any Indian and Pakistani grocery store. I also added 1/4 cup of millet flour. It can be bought at any Indian and African food stores too. 1 added 1/4 cup of all purpose unbleached flour. I added 3 pinches of boabab powder, 1 pinch of baking soda and 1/2 cup of water.
You may not need the whole thing. Just add a little at a time until you have a nice piece of dough that you can work with. Here olive, peanut, safflower, sunflower, olive, corn and canola oils are ok here in this recipe. I used peanut this time and added 1 tsp to the dough. This makes the dough nice and pliable.
I brought a rapid boil 1 gallon or 4 liters of water and pinched off pieces of dough that was a tiny marble size and rolled it in to a ball after I seperated a piece of dough In to 4 or 5 small pieces and rolled each one in to a long cyllinder. With 1 long piece of dough broken off in small pieces and dropped in to the boiling water, I watched until Ieach tiney dough piece floated to the top. This is a sign that it is done then strain it out with a spoon with wholes in it making sure that there is no water left remaining and add it to the bowl. Repeat until it is all finished. There should not be any more dough remaining.
Now it is time to season this danwake. I put 1 pinch of red chili, my suya paste recipe , you can add the store bought if you like. I added 1/4 cup of peanut oil, 1 oz of lemon juice, 1 onion or shallot, 3 dashes of maggi or knorr aroma, and 1 tomato. I broke up 1 bullion cube until it was like a powder and I added 1 pinch of this to the danwakee too.
I boiled 2 chicken eggs or 4 quails eggs for 10 minutes then cut them in half and added this to the danwake which is optional. I mixed everything together and I really like how it tastes. All of this for this yummy dish that makes up this sauce and I did it without making another bowl dirty. 😀 Try it it can be done and it will make less work too.
I hope you like this dish very much. Oh the remaining bullion I used for making fried rice which is for dinner tonight also.
