I was looking at this some time ago on how to make it and it was All Nigerian Recipes that gave me an inspiration to adapt it for in the microwave. Here is my method for making this microwave agidi and I hope you will like it.
I added 3 tbs of cornstarch and 1/2 cup of water a little at a time to keep it from getting lumpy. I made it in to a slurry and covered it with plastic wrap and cooked it for 1 minute in the microwave. I took it out again to see how it was getting along and cooked it for another 2 minutes in microwave.
I put it in a small container and let it cool until it was at room temp. I then put it in this pretty bowl that you see in this picture. I then ate it with my pepper soup I made.
