I have seen this done on the African food blogs that I frequently visit. It is made on the stove normally. I wanted to do one for microwave so I did.
I have gone to the African store to buy some cassava starch. I added 1/2 cup of cassava starch to a bowl. To this I added 3 tbs of red palm oil and 1 cup of water a little at a time until it is a lump free mixture.
It was a batter like consistancy when I put the cling wrap on it and placed it in the microwave for 2 minutes.
I carefully removed the cling wrap so I do not get scalded and formed it in to a shape. I placed it back in the microwave for another 2 minutes.
This is eaten with banga soup and I found it to be quite chewy and gummy. Well I have enjoyed it anyway.
P.S. I just did a stovetop version of this. I mixed the required cassava starch and water together and put the same amount of red palm oil in a hot cast iron skillet and kept stirring and folding until it is formed in to a bowl. I put it in plastic wrap like I did the microwave version.
