I really love pasta as you can tell. I also found some zabiha halal Italian sausage at the halal meat store I go to. You can either use this if you prefer or make your own.
First I made the pasta according to package directions. Any type of pasta will suffice except for lasagna noodles.
If you want to make your own, you will need 1 lb or 1 kilo of mince also called ground meat for starters.
The types are lamb, chicken, turkey, goat, veal and beef. The spices are used are 2 cloves of garlic, 1 pinch each of sage, black peppercorns ground in a mortar and pestle.
Add contents in to the ground meat to make the sausage, add 1 pinch of fennel seeds whole, 1 pinch each of pink salt, red chili flakes, thyme, rosemary, marjoram, basil, paprika and oregano. Add 1/4 cup of breadcrumbs then mix and shape in to links the size of a finger. Fry these on low heat until they are done using 1/4 cup of olive oil until they are done and set these aside.
Never mind the amount of olive oil left over in the skillet or pot because it is very useful.
Add the homemade sausage or 1 package of zabhiha halal sausage and add 1 large onion to fry. Add 2 cloves of garlic chopped with all of the spices listed for making the Italian sausage plus 1 whole bay leaf and this time grind the fennel seeds in the mortar and pestle.
Add 4 dashes of balsamic vinegar, 1 pinch of cinnamon powder to kill the acid in the tomatoes, 3 sundried tomatoes cut in to small pieces, either 1 large bell pepper or 7 mini sweet peppers cut in to tiny pieces and cooked until soft.
Add 1 can of tomato paste and 3 cups of water then cook for 6 minutes on low heat.
The sauce is nice and thick and ready to put on top of pasta. Enjoy this wonderful dish because it is a hit.
