I made this past Thanksgiving and it was a part of my table this year It can be made with either meat like 1 lb or 1 kilo of lamb beef or veal necks otherwise called neck bones or 3 pieces of smoked turkey parts with an assortment of greens.
However if you use mixed greens use 1 bag of the frozen ones. Unless if you are entertaining lots of people you can use 1 to 2 bunches each of the fresh ones as well. The greens used are kale, mustard, turnip, spinach, collards and chard. If you use fresh greens, pick the greens by removing them from the stems except for spinach. I used mustard greens.
After I picked them, I added 1 drop of dish soap on there to clean them. This gets the grit out and it is effective. In a pot on high heat I added 1/4 cup of olive oil, 1 onion or shallot cut in to half moon slices, 2 cloves of garlic sliced. If using unsmoked lamb beef or veal necks or meatless add 3 dashes of liquid smoke. If using smoked turkey then there is no need to even add liquid smoke.
In a mortar and pestle add 1 pinch of black peppercorns and add them to the pot, add 3 dashes of seasoned salt or vegtea seasoning, 1 pinch crushed red pepper and 2 cups of water. Stir then add the greens and place lid on pot and cook for 30 minutes or until it is done.
If you are using frozen greens then the picking and cleaning is not necessary. Just cut the bag open and use.
Serve with cornbread or with hot water bread.
P.S. For instant pot and the like, add the olive oil fry the onion or shallot with the garlic on sauté on high, add spices, liquid smoke only for unsmoked meat or for veg option. Add water.
Add meat if using then pressure cook on high for 20 minutes for chicken and up to 40 minutes for tougher meat like turkey, beef, lamb, goat or veal. Press the quick release button, add greens of choice even for veg option, again select sauté on high or select steam on high for the greens. For veg option tap sauté once for 20 minutes. If doing it in the instant pot and the like, add the olive oil, onion or shallot with 2 cloves of garlic on sauté function on high and cook until onion or shallot is brown.
Add the black peppercorns and whatnot which is the same instructions as for stovetop method then add the rest being the rest of the seasonings either with smoked turkey or pieces of zabiha halal turkey or beef bacon or unsmoked meat with liquid smoke or just add liquid smoke and let it remain vegetarian or vegan.
Stir and add 2 cups of water then add in greens and let it pressure cook on high for 10 minutes.
