Heys folks how are you? I have a nice spice mix recipe for you and you need to make this before you make jambalaya and other creole and cajun dishes. This can be rubbed on to chicken or meat such as beef, lamb, goat, veal and turkey before you put it in the oven.
I have a small bowl to add my ground spices to when I am finished and I am going to show you on how I did it. This is all you need to make 1 pot of jambalaya which is the next recipe..
I added 1 pinch each of cumin seeds, coriander seeds, allspice, and black peppercorns, I added 2 kabab chini (cubeb), 1 strand of mace and ground in to a coarse powder then emptied the contents in to a smal bowl.
To this I grated some nutmeg, you do not want to add too much because it is a strong spice. I added 3 shakes of seasoned salt, 1 pinch each of basil, thyme, white pepper, oregano, and red chili powder. I added to the mortar and pestle 1 clove of garlic and one small slice of onion or shallot and ground them in to a pulp and added it to the bowl and mixed.
