This is a tripe recipe post I am doing. It is in the style of the Peshawar area here in Pakistan.
The food here is very simple. The regular method is 5 to 5 1/2 hours on low heat for stovetop method. There is also pressure cook method which we are going to use for this tripe dish.
One of my brother in laws bought some brown tripe that is of good quality and very little fat. This was from a cow. You can use from a lamb or goat too if you wish.
First I used my fingers to remove the pieces of fat on the smooth side of the tripe. Then I put it in a large bowl to finish cleaning it. I added 3 tbs of white vinegar with 1 tbs of white salt or kosher salt, baking soda and 1 liter or 1 quart of water to clean it.
This water gets changed 5 or 6 times. One of my sister in laws was in the kitchen with me when I made this. The pressure cooker has a screw type lid. I am going to post it on my Instagram, so please stay tuned to the posts over there too.
The tripe is cut in to small pieces. I held it while one of my sister in laws was assisting me did the cutting. Kitchen shears can be used if you are solo.
After it is cleaned and cut place it in a pressure cooker with 6 cloves of garlic, 1 small piece of ginger washed and peeled, 1 pinch each of whole Garam Masala, coriander seeds which are ground in a mortar and pestle.
Add 1 pinch each of pink salt, red chili powder and tumeric. Stir and add 1 liter or 1 quart of water. Stir again and place lid on pressure cooker and make sure it is attached securely.
You don’t want an ugly and dangerous mishap in the kitchen so please play it safe. Also small kids should not be in the kitchen at all.
The pressure cooker at 30 minute intervals 3 times each on medium heat. That is 1 1/2 hour of cooking time. Or 5 hours of stovetop on low heat for non pressure cooking method. If using a pressure cooker make sure there is enough water. Add 1 cup of water twice after the pressure releases. That is 1 cup of water in between.
This tripe was pretty tough so it took 1 1/2 hours. If using a pressure cooker for the first time please read the owners manual for safety precautions for your safety.
When the tripe is nice and tender, add 2 generous pinches of cilantro.
