I made this dish to put on my injera and it was so yummy. I had a taste for african food again and I can’t help myself because it is so tasty. This is how I made this awesome dish.
First make Berebre and Niter Kibbeh because these two have to be made first before you can make this dish. Do not worry. They are for single use only.
Ok now add !/4 cup of olive oil to a pot that has been heated on high heat. Let it get hot a little and add 1 chopped onion or shallot, 1 packet of zabiha halal beef jerkey, I used Midamar brand. This is in a lot of zabhiha halal meat stores. If you do not see it ask for it by asking the owner or manager. I just seen they also sell it on Amazon.com.
What is zabiha halal? It is praying over the animal by saying Allah’s name just before it is slaughtered then the jugular vein is cut and the blood is drained out of it.
Add the berebre, niter kibbeh that has been made before hand then stir and add either 1 bullion cube or 3 pinches of vegtea seasoning, 3 dashes of maggi or knorr aroma, 1 tbs of tomato paste and 2 1/2 cups of water and stir.
Bring this to a boil and lower the heat to low heat. Add 1/4 cup of shiro which is also called besan or chickpea flour in to a cereal bowl and add 2 cups of water a little at a time and keep mixing as you go to prevent lumps from forming. Make sure it is a very thin batter type before adding. As it cooks it gets very think so please pay attention to what you are doing.
After it becomes a smooth lump free batter it is time to add it to the dried beef mixture in the pot. Add a little at a time and mix very well to prevent lumps and it gets thick very fast. Add another 2 cups of water and stir until it thickens up again a little. Make sure the heat stays on low because you do not want this hot mixture to pop all over the place.
This method is totally fool proof and I hope you will enjoy it. Serve on injera with your choice of sides. In the next posts we are going to be delving in to more of Ethiopian cooking. This goes for all of the recipes I have tried out and I am showing you how I did it.
