What is milkfish Benazir? This is what you will ask me. I am answering you that it’s color is milky white. That is why it is called milkfish. First you preheat the oven to 375F or 190C. Spray foil lined cookie sheet with cooking spray.
I had 1 whole milkfish that was uncleaned. I used a spoon first took the front of it from the tail on all the way down to the head on all sides of the fish. Once the scales were removed then I clipped all of the fins off. I took a small knife like a steak knife because they are sharp and cut the fish’s belly open starting from under the heat to near the tail.
Remove the entrails. Take a butcher knife and take off the head of the fish. The gills are in the head of the fish and there wasn’t much meat on it that is why I threw it away. Keep washing the fish in cold water until the water runs clear and is not bloody.
Take the head and entrails and place it in a plastic bag and tie it up real good and throw it in the garbage asap before it stinks up the house. Seriously it will stink to the high heaven.
Place the now cleaned fish and add 2 tbs of either lemon or lime juice. Make the suya paste spread all over the fish. It is on the fish and in the cavity. Bake this suya spiced fish for 20 minutes in the oven. Flip gently by using the aluminum foil by folding around the fish and turning on the other side and cook for another 20 minutes.
