I have another tantalizing recipe for you. I really enjoyed the yummy beans and rice paired with the creaminess of coconut milk. It was very yummy on my pallet. I hope you will feel the same way after trying out this recipe the way I do.
Mr. Riaz was shocked I did not use red palm oil in this recipe. Red palm oil isn’t an ingredient in this dish at all. Also the reason why I didn’t use is because it would turn rice red but I wanted it the same color as the coconut milk which is white. Also the pressure cooker should be on high heat before you add the oil.
I added 1 pinch of uziza seeds in the mortar and pestle to grind and set it aside. I added 1/4 cup of peanut oil in a pressure cooker then I added 1 onion or shallot and fried until it was brown. I added 3 cloves of garlic crushed and cooked it until the rawness went away. I had some 1 cup of beans I had washed. They can be black, cranberry beans, mayacoba, Roman beans, Red or white kidney beans, adzuki, any type of white beans such as navy, small white beans or great northern, blackeye peas, pink, red or brown cowpeas, African red or brown beans.
I added 1 qt or 1 liter of water just making sure it is enough to cover the beans. Add 1 bullion cube, the ground uziza seeds, 3 dashes of maggi or knorr aroma, 1 pinch each of thyme, crayfish, either red chili powder or African yellow chili powder, dawadawa, moringa leaves or scentleaf. Add everything but the rice and coconut milk to the pressure cooker. Close the pressure cooker and wait for the safety button to pop up then cook for 20 minutes.
Turn heat off and let sit until there is no more pressure then it is safe to open. If it is a little hard check the water to make sure there is enough water then once more for 15 minutes then shut off the heat. If soft the first time around then skip and go to final step.
Here you can use any type of rice. I used 2 cups of jasmine rice for this dish and I rinsed until the water was clear. I added this to a big coldero. I added the beans from the pressure cooker and 1 can of unsweetened coconut milk. I wrapped the underside of the pot using aluminum foil. You can also use banana leaf if available.
Many stores selling products selling Spanish groceries and from the Caribbean sells them. Bring the rice to a boil on high heat then lower it to a simmer and put the lid on. let cook for 20 minutes. The rice has absorbed the liquid check stir and replace the lid. Shut the heat off and let stand for 20 minutes before serving.
This is perfect with any type of roast fish, chicken, turkey, rabbit, whatever. Also do not forget that bottle of ice cold non alcoholic brew or goya malta light.
