I was actully and serioously craving tuna melt sandwiches. It has been ages since I had eaten one at at a restuarant. It is obvious mine is better then any restaurant version. It is a glorified tuna sanwich with melted cheese on it and eaten hot. You can eat it with either two slices of bread for top and bottom or open faced. Open faced sandwiches are just one slice of bread. Any type of sliced cheese and bread can be used.
There is the tuna salad recipe and the tuna croquette type. Today I made the tuna croquette type. Here Is my recipe as follows. I added to a bowl 1 can of tuna undrained, 1/2 cup each of all purpose unbleached flour and cornmeal, 1 pinch of baking powder, 1 egg, 1 onion or shallot minced, either 3 pinches each of vegtea seasoning, adobo or seasoned salt, lemon pepper, 1/4 tsp of either pickle or olive juice, 2 drops of either maggi or knorr armoma, Worcestershire sauce, liquid smoke and pepper sauce.
Mix this until it becomes a soft dough which is almost batter like consitancy. Heat up the skillet or wok then add 1/4 cup of corn, canola, peanut, sunflower or safflower oil. wait til this gets hot and add by table spoons full of the dough and flatten a little and let fry until it is all golden on the outside and done on the inside. Take the finished ones and place it on a paper towel lined plate.
Repeat until there is no more and it is all used up. To make the sandwiches, since I was so hungry I used 2 slices of bread for top and bottom. I put mayonnaise on each slice or bread, either the tuna croquette or if using tuna salad skip using the mayonnaise, Put 1 piece of cheese on top and then the other piece of bread on top and place it in the skillet and let bread get golden and let the cheese melt like you are making a grilled chesese sandwich.
For the open faced version I placed the slices of bread in a toaster then add some mayonnaise to each piece of bread and put it on a microwave safe plate placed the tuna croquette on top or tuna salad. Same rules apply for this method if making tuna salad. Put cheese on top and pop it in the microwave for 40 seconds or until cheese has melted.
It was very tasty and I hope you like this recipe. Also enjoy this with olives and pickle slices on the side.
