Bronchits got me in to writing another recipe for pepper soup. So far this time It is more like everything is thrown together. Okay so much for creativity and it is still tasty. I wanted to sweat and get rid of what is bugging me asap. Like any other pot of pepper soup, this did its trick.
When you are sick or just want to escape the Chicago cold, this soup is for you. I added 1 oz of red palm oil, ground my pepper soup spice, 1/2 gallon or 2 liters of water on high heat. I let this come to a boil and turned the heat down to medium.
I scrubbed 2 potatoes and cut them in to small pieces. The method I used was to cut it in half and then sliced these in half moon slices and then these got sliced in to chunks. I did not peel the potatoes but you can remove the skin if you want to. This got added to the pot with 1 packet of fish filets. I used walley pike but any type can be used.
I added 1 bullion cube crumbled, 3 dashes of maggi or knorr aroma, 1 pinch each of paprika, thyme, tamarind, sentleaf or basil, bitterleaf, uziza leaves, crayfish, 3 stalks of lemongrass, 1 cup of okra after I had chopped it in a mini food processor. I used frozen cut okra but you can use fresh too if you want. I just did not see any decent fresh okra about. This is why I used the frozen.
The potato I used is optional so is 1 plantain either green or yellow, 1 yucca if bought fresh then you have to peel it or you can use 1 small bag of frozen. This is a time saver 4 cocoyam which has to be boiled for 20 minutes and drained before I peel it. I am somewhat allergic to the peel of the cocoyam. Also 1 small peeled and cut in small pieces are added and boiled before making this soup if you are using these. If not eat with fufu.
I am sorry if I am jumping the gun here. This bronchitis got me going crazy here. I add the chopped okra and in the same mini processor I add 6 mini sweet peppers or 1 large bell pepper any color except red, 1 habenero or scotch bonnet, 1 onion or shallot, 3 cloves of garlic and let it run so it can chop it in to tiny pieces. Add 1/4 cup of water and run the mini processor again and add this to the pot.
I cooked it for an additional 15 minutes and shut the heat off and ate it piping hot. I started to sweat and at the same time feel all of the congestion in my chest start to clear up. Please let me know how you enjoy this recipe.
