Oh My God I love celery and I wanted to take a crack at making celery soup. I looked on line at various sights on how to make this yummy soup and I came up with my own yummy simple recipe. Here it is in the nutshell. It is so simple and yet so easy.
You also will need an immersion or stick blender which is so much easier then letting it cool completely and putting it in a blender or food processor. Plus it is less clean up and a lot easier. They have them at Target, Kohls, Best Buy and other stores like this. I have an Oster which works very well and it is very affordable. Plus this company has been around for a long time along with Sunbeem. However Sunbeem and Oster had a merger. I have to Google it to make sure. Please do the same thing? This way you keep up to the latest mergers and acquisisions.
For the soup I turned on the heat to high heat on stovetop. I added 1/2 gallon or 2 liters of water, 1/2 head or 1 full head of celery washed and cut in to small pieces. Remove the stalks about 3 at a time and wash very well and cut in to tiny pieces until the celery is all cut up and placed in the pot of water. Add 1 bullion cube, 3 dashes of maggi or knorr aroma, 1 pinch of black peppercorns in mortar and pestle to grind in a coarse powder and added to the pot. Reduce the heat to low.
Add 1 oz of olive oil, 1 onion or shallot, 3 cloves of garlic peeled and chopped, 1 pinch each of dill weed and either parsley, watercress or tarragon, 2 potatoes scrubbed and chopped. I didn’t peel the potatoes and the skins are very edible. If you want to peel the potato then this is ok too. place these in a pot and cook for 20 minutes or until every thing is soft.
Shut off the heat and let sit for 20 minutes so it can cool slightly then puree with the immersion or stick blender. Turn heat back on to high and add 1/4 cup of milk, bring to boil, stir and cook for another 5 minutes and shut off the heat. At this time it is ready to serve.
Enjoy with sandwiches. They can be egg salad, tuna salad, turkey salad, herring salad, zabhiha balongna or salami, turkey sandwiches or even burgers.
