I may get some eye rolling action or a seal of approval for this recipe. I hope this is given a ghost of a chance before I get some eye rolling action. I was watching on Netflix this program the mind of a chef. I however am a housewife also called a homemaker which is another term for it.
It means I have time on my hands and I am allowed to have my thoughts going wild. It is also the 3rd day of Eid and Eid Mubarak. This is the standard Arabic that many of us Muslims say for at least saying Happy Eid. This is Eid al Fitr. It is because we finished fasting and getting through Ramadan. In Pashto it is Akhtar Mubaraksha. This is what I say to my family because They are Pathan and speak Pashto. For my Turkish friends I say Bayram Mubarek Olsun.
I was mad busy getting ready for Eid plus I had no energy nearly because of my hypothyroidism and I was laying low conserving energy during Ramadan. I got super hungry today and wanted something to put in my tummy and when I seen on tv of this program I was watching as I mentioned above.
I wanted to put my own stamp on this fabled red eye gravy. I learned as I watched that Andrew Jackson’s cook had red eyes because he had a hangover; so he threw a cup of coffee in the what was supposed to be gravy to sober him up. Ok I just looked it up in Wikipedia and it said that Jackson then president wanted a gravy that was as red as his cooks eyes because of hangover. So ok I was close, lol.
The original is made with a haram ingredient which we will not even mention. Haram means not permitted. Halal means it is allowed and Zabiha means that the animal has been prayed over before it had its throat cut and turned upside down to make the blood leave out of the carcass.
What you need first is to make 1 cup of coffee and set it aside for later. I know it is highly tempting even for me but do not drink it. Trust me the struggle is real.
Spray wok or cast iron skillet with cooking spray and fry 8 pieces of zabiha halal beef or turkey bacon until it is crispy. The beef bacon is very fatty and it would render down nicely. Remove the pieces and make 4 at a time until there is no more. Again it depends on how many people you have to feed. If you are feeding 1 or 2 people then 8 is enough and you may use up to 12 pieces if there is another person eating with you.
Add 1 tsp of either canola or corn oil if you are using either turkey or Morningstar farms stribbles. Add tsp of flour to make the rouix. make sure it is a little brown then add the coffee to the roix in the wok or cast iron skillet. If you are gluten sensitive then you can take 1 tsp of cornstarch place it in a bowl then add a little coffee at a time so no lumps form until you have a slurry then add this to the oil in either the wok or cast iron skillet.
Add 3 dashes of seasoned salt and stir until it is a little thick and it coats the spoon. Do not forget this is supposed to be a little thin.
