Hi folks. As you already know I read Eating Nigerian’s blog besides the others. I tried her recipe out before and it was yummy. Really she inspired me to do a spinach and egg recipe so here is mine.
I added 1/4 cup of water to a blender for ease of blending, 3 cloves of garlic, 1 onion or shallot, 1 tomato, 1 bell pepper of any color, either 1 habenero or scotch bonnet deseeded, blend. In mortar and pestle crush 1 pinch each of uzziza seeds, 1 bullion cube and set aside.
Add 1/4 cup of either red palm oil or olive oil to the pot, add the contents of the blender to make a stew base, the contents of the mortar and pestle, 1 pinch each of crayfish, white pepper, paprika, curry powder, red chili powder or African yellow chili powder if scotch bonnets or habeneros are not used, 1 bag of frozen spinach or efo, cook for 10 minutes on low heat. Add 3 dashes of maggi or knorr aroma, soup thickener, crack and add 4 eggs to the spinach mixture and stir. The eggs go in at the last.
The finished item is on the left and on the right is mearly a serving suggestion. This is 1 packet of noodles such as indomie, shan, knorr, maggi, chings, etcectera. Cook noodles according to instructions on package then mix the spinach and egg with it if you wish and add 1 can of any type of oily fish such as sardines………….. You can also eat it with naan, pita bread, rice or quinoa too.
