Actually this dish is both hearty and healthy with very few ingeredients. I hope you will like it. When you think about Africa that it is a very big place. When talking to an African you have you will find out that they are very direct people and will let you know what part they are from.
This is my adaptation of one of my pins in Pinterest. I said hum, I got to try that. It is also a dish that is so simple and very minimal effort in to making this dish. here I used a small bag of frozen lima beans. and cooked it on stovetop regular method for at least about an hour to 1 1/2 hours.
If using dry beans it is 1 cup of beans which are lima in dry form too. Roman, pink, pinto, canary, cranberry, adzuki, any type of red and any type of white beans will do just nicely. Wash these beans and selt them aside. Take 1 cup of frozen whole kernal corn and set this aside too.
In a pressure cooker which is perfered on high heat add 1/4 cup of oil. It can be olive, corn, canola, peanut, safflower or sunflower. Add 1 onion or shallot cut in to half moon slices and let brown, Peel, chop and add 3 cloves of garlic. Add one bullion cube that has been crushed with a mortar and pestle. Sometimes it gets hard and it is difficult to crush with your hand.. This makes it easier.
Add 3 dashes of maggi or knorr aroma, Add 1 chopped tomato and let it cook down until it is mushy, 1 chili of any type is purely optional. The original did not use but I do because I love chili or you can add 1 drop of hot sauce instead. this part is up to you. Add 1 liter or 1 quart of water and let the pressure build and safety button pops up then cook for 30 minutes. Turn heat off to let pressure escape before opening.
If the beans are still a little hard then add 1 more cup of water and again repeat for another 15 minutes and for final time turn heat off and let pressure escape.
If using regular stove top method it is going to take you at least 2 to 3 hours, and slow cooker method is after you cook everything from the browning of the onions and cooking the tomato down unitl it is a mush and please do not forget to add the garlic and then the chili if using.
When this is like a tomato curry like base then add this to the slow cooker with the rest of the ingerients then cover and turn it on to high for at least a good 4 to 5 hours.
Serve this with ether rice, polenta. grits or chapati Enjoy.
