Actually I desided to make a pot of stew out of things I have here in my house. Thanks to Amazon I had to order a few spices to make up this blend so I can make this yummy stew. On high heat add 1/4 cup of grapeseed oil, olive oil, safflower oil or sunflower oil.
Add 1 onion or shallot cut in to half moon slices, 3 cloves of garlic chopped, cook them until they are nearly brown. Empty the contents of the mortar and pestle that the new spice blend called advieh. It is new to me at least because this is the first time I am tasting this spice in something that is totally my own creation.
Again in mortar and pestle add 2 cloves and gind them and empty them in to the pot. Add 1 pinch each of turmeric, red chili powder, paprika and pink salt, 1 chopped tomato and let it cook until almost mushy. Add this time 1 drop of balsamic vinegar, 2 bay leaves, 1 pinch of either mint, parsley or dill leaves.
Now you can add your vegetable of choice like 1 head of cauliflower or broccoli, 4 baby eggplants, 3 yellow squash or zucchini if you are using fresh. If you are using frozen vegetables it is 1 cup of the frozen vegetables, 4 potatoes scrubbed and chopped, 1 pound or 1 kilo of either lamb. goat. veal, beef or chicken.
If using fresh broccoli or cauliflower, start by taking the tops off the core first and chop all in to small pieces. Add 1/2 gallon or 2 quarts of water and turn heat down to low, Let cook for 1 or two hours via regular stovetop method or 30 minutes via pressure cooker.
This is served with naan and I hope you will like it.
