Here I go delving in to Thai cooking again. This time I am doing the red curry paste and putting my spin on it. It tasted very good just like the green curry paste I made. Do you remember my green curry paste and the yummy fish I had made from it? If you do, my red curry recipe is just as delicious. That I can tell you is a guarantee.
In mortar and pestle add 1 pinch each of coriander seeds, cumin seeds, black peppercorns, grind to powder, break off a small piece of dried galangal and great it with a fine grater. Do not use so much because it is a strong spice. Add 1 pinch of white, mix a little bit in mortar and pestle and selt aside.
Now the blender part goes like this which is also the same method as my green curry paste except this one is red. In a blender add 1/4 cup of water for blending, Add 4 fresh red Thai otherwise called also birdseye chilies, 1 large red dry chili, Deseed either 1 fresno or red jalapeno chili, 1 onion or shallot cut in to chunks, 3 cloves of garlic peeled, 1 small piece of ginger only if you do not have galangal or want to strech it. Peel wash and then add it to the blender.
Add 1 pinch each of turbinado sugar, pink salt, cilantro, 3 pieces of lemon grass, 1 kafier lime leaf, 1 drop of lime juice 2 drops of soy sauce, the contents of mortar and pestle, 2 drops of fish sauce or 1 dab of either crab paste or shrimp paste, 1 tsp of coconut milk, now it is time to blend all of these ingredients together.
Now I got my dried galangal from Amazon. You can buy it from an Asian market also the other ingredients like the chilies and the cilantro are everywhere also check in an ethnically diverse area. I can find everything over in my neck of the woods. If not do not be afraid to ask the store manager. The fish sauce, crab paste and shimp paste can be found in Asian markets too. The best cumin seeds, coriander seeds, and black peppercorns are at Indian and Pakistani stores. coconut milk lemon grass and kafier lime leaves are from Asian markets, turbinado sugar and the rest of the stuff in regular groceries.
