Actually my family knows I am a huge fan of mushrooms and I say this one is really a keeper. For small fish like butterfish I would at least clean at least about 6 before seasoning. For bigger fish like tilapia, trout, herring, mackeral, pomfret, etc. It depends on how many people I am feeding between 1 or 3. 1 lb or 1 kg of fish turned in to steaks is perfect too for griling such as catfish. 1 bag of fish fillets and shrimp too. This recipe is for all types of fish. I would even throw on the grill anywhere between 4 to 6 portobello mushrooms. My preferance is the caps because the stems are a little too woody for me.
In a food processor combine 1 onion or shallot, 8 cloves of garlic and 2 pinches of parsley that is finely chopped. Add to the fish and portobellos that has been cleaned to a bowl and add 1 tbs of lemon juice all over and inside the fish. The onion and garlic mixture gets added to the fish and mushrooms plus the sauce goes on top of the pasta evenely.
Add 1 pinch each of either seasoned salt or vegtea seasoning, lemon pepper, thyme, rosemary, basil, oregano, 1 tbs of the onion garlic mixture to the fish both inside and outside and the mushrooms too as well.
Spray the grill with cooking spray and add mushrooms first and cook them for 6 minutes per side. For those that have an electric grill like me since I have a George Forman grill that give or take I would say a 4. People have different grilling methods For those who come in to my group in Facebook called Benazir’s Blog A Cooking Guide are more then welcome enough to tell me what their mode of grilling is. After the mushrooms are done I remove and place the fish. Cook this for at least 20 minutes which is 10 minutes per side. when the fish turns opaque and starts to flake it means it is done. Shrimps turn a lovely pink color when done.
Any type of pasta is ok too. Just cook it according to package directions. Everyones stove is not the same. It takes my pasta at least 20 minutes for it to be done. Before cooking the pasta add 1 tbs of olive oil and 1 pinch of pink salt to the water. When the pasta is done drain and rinse it then readd the pasta back to the pot that you cooked it in.
For the sauce it is 1/4 cup of olive oil, 2 pats of butter, the rest of the onion garlic mixture, 1 pinch each of the herbs that you put on the fish and mushrooms and 1 pinch of savory, 1 tbs of balsamic vinegar. Cook until the rawness of the onion and garlic goes away. Add this to the pasta with 2 tiny pieces each of romano and parmasean cheese crumbled and added to the pasta, add this yummy herby sauce, the mushooms and the fish should go on top.
P.S. If you want you can add 1 can of canned fish of any type if desired or for a variation is just grill the portobello caps and make just the sauce to go on the pasta and boom.
