I remember when I was in high school and in the last group home that I was in. It was not too far from the Snuggery that was I think near Northwest Highway and it was in the Edision Park area of Chicago. Niles and Park Ridge are very close to this location too. The group home I was in was on the border of Chicago and Park Ridge on Canfield.
I already told you in earlier blog posts on how dysfunctional my dad is in earlier blog posts. I was in and out of group homes from the age of 5 until I was 19 and these were my formative years. However at the Snuggery at this location was the first time ever I had a spinach salad. It came with a hot bacon dressing which I did my zabiha halal version of it in in the next post.
You can eat any type of salad dressing you wish with it. When I first ate it however it was with oil and vinegar. First you boil 1 to 2 eggs for 15 minutes then let cool.
As these eggs are sitting aside cooling take 2 cups of baby spinach and rinse them. They came in a container prewashed but still rinse them anyway. Wash and add 1 cup of cherry tomatoes or 1 roma tomato washed and sliced in to half moon slices, 1 cup of white button mushrooms washed and sliced, 1 small onion or shallot cut in to half moon slices, 1 handful of baby carrots washed and julliened, 1 cucumber washed and sliced.
Mix and peel the hardboiled eggs and slice in half and place on top of the salad. Serve with salad dressing of choice and enjoy.
