Actually I want to do another version of chocolate cake and I was thinking of a double chocolate cake or a like a chocolate cake with chocolate chips in it and this is where I got my idea for this recipe. This is completely free from white sugar and I used instead of chocolate chips some cocoa nibs which are fair trade.
Cermac grocers here in Chicago has them and If your grocery store doesn’t carry it, please ask them to stock it for you. This is in areas where a lot of people are health conscience or want to be concience of their health which is a great thing. I also spotted some chocolate infused balsamic vinegar which omg it is so fantastic drizzled on some fruit even.
Now to the cake recipe itself: preheat the oven to 375F or 190C then take a medium mixing bowl and combine first the dry ingredients 2 cups of all purpose unbleached flour, 1/4 cup of either turbindano sugar or coconut sugar, 1/4 cup of nido, 4 tbs of unsweetened cocoa powder, 3 tsp of cornstarch, 1 pinch of pink salt, 3 tsps of baking powder, 1 handful of cocoa nibs then stir to mix. The coconut sugar itself is also fair trade.
The wet ingredients goes right on top of the dry: add !/4 cup of either agave nectar or sugar free syrup in place of turbinano sugar or coconut sugar if you want to. This is the opetion for sweeteners. It is not advisable to use all four types at once. Add each of vanilla and or orange essence. I was intending on adding the orange essence in the cake so I left it out lol and so next time I will add. I added 1 tsp of the chocolate infused balsamic vinegar I was talking about. You can also use the any of the others that are fruit infused too as well. Even rasberry vinegar if you can find it is splendid.
If you can’t find these then ask your crocery store to get it for you. Apple cider and white vinegar is also an option and this can be gotten everywhere. Add 1 egg. I also seen one cake that was posted in Discord from a Runescape clanmate. she posted a picture of a cake using olive oil. I said hummm I am going to try this in the next cake I made so this I did indeed. I added 3 tbs of olive oil like I said I would. You can also use grape seed oil, canola oil. corn oil, peanut oil, coconut oil or almond oil. Add 1 cup of water or enough to make a cake batter. Add a little at a time and keep stirring until you have a nice lump free batter.
Spray a cast iron skillet with cooking spray or a cake pan that has been sprayed with cooking spray and parchment paper has been added to it and spray again. I love cast iron skillets so much because of their versitility you can cook on top of the stove and bake by using it in an oven. They are easy to clean and they last a long time too.
Bake the cake for 20 minutes or until done. insert a tiny blade of a knife a toothpick or a fork and if it comes out clean it means it is done. If it doesn’t then put the cake back in the oven for another 15 minutes. Repeat until the fork or whatever comes out clean. Not everyones ovens has the same calibration so bear that in mind too.
