I wanted to try out this dish and I seen on YouTube on how it is done. However I put my spin on this yummy dish and it came out really yummy at the end. Here you want the vegetables tender and not crunchy and definatly not overcooked where it is going to kill the nutrients inside these vegetables.
I know one of my nephews who is a carnavoire is going to ask, “Benazir Mammi when are you going to make another meat dish?” He teases me half to death because I really love my vegetables. He is also the “algae boy.” I do on occation put 1 tsp of either spirulina or corella powder which is fresh water algae loaded with lots of nutirents. Enough chatter for now.
First you meed to make this and set this aside. In a coldero you will need to add 1/4 cup of olive oil, canola oil, corn oil, peanut oil, sunflower oil or safflower oil and bing it to the point where it is hot then add 1 onion or shallot chopped and turn heat down to low. Cook until onion or shallot is caramelized. Add 1 green chili cut lengthwise in to quarters, 2 cloves of garlic chopped, 1 pinch of turmeric, the niter kibbeh is the link above gets added too, 1 bullion cube, 3 dashes of maggi or knorr aroma, 1 pinch of parsley, 1 tomato chopped.
Make sure the tomato is nice and mushy. Add 4 large carrots lenth wise and cut those again cut those carrot halves lengthwise to make a quarter and cut these quarters in half by cutting right in the middle. They should look like carrot sticks or take 1/2 bag of baby carrots and quarter them lengthwise and 1 lb or 1 kg of fresh green beans washed, trimmed, and cut in to 4 sections or 1 bag of frozen green beans cut in any style.
Add to the spicy butter mixture in the pot and turn heat to low. Stir the carrots and green beans in this mixture to let it coat the vegetables and cook for 20 minutes. This way it is not nescessary to add water unless if using frozen then add 1/4 of a cup. Keep covered while cooking. If still a little crunchy then cook for another 20 minutes or until they are soft the spoon should be able to cut through the vegetables like melted butter.
Enjoy this with injera or chapati.
