I have made this to go with my recently made soup I had just published. I have just some plain old ordinary rice flour and decided to use it. I really am pleased with the results of it because it went beautifully with my soup.
In a microwave safe glass bowl add 1/2 cup of rice flour, 1 cup to 1/2 cups of water and mix until it is lump free. Cover loosely with the top because you do not want it to go pop in the microwave. Cook for 1 minute 30 seconds, just hit 130. When you hear the microwave go ding then take it out and stir until you see the fufu itself leave the sides of the bowl.
If it tastes a little grainy then add 1/4 cup of water and mix again. It was thick but it is ok then place back in microwave for 1 minute and 15 seconds by hitting 115. When time is up again and mix again and this time it is ok then take a piece of plastic wrap and line a bowl with it and add all of the new rice flour fufu to this plastic wrap lined bowl. Make sure you scrape the sides of the bowl and spoon when you are putting this fufu in the other bowl lined with plastic wrap. When it is all in there, fold the plastic wrap around the fufu making sure that it is made in to a cute little ball,
Now it is ready to be eaten with any kind of Hausa soup. Please do not forget to bring out the nice ice cold non alcoholic brew.
