As you may know a lot of dishes from the Southern part of the United States of America otherwise known as plain old down outright delicious soul food is very basic and pretty much not made with too many ingredients and very simple. It is also very filling and easy on the budget. It can easily feed a medium to a large family on a shoestring.
In a pressure cooker add 1/4 cup of oil of corn, canola, olive, peanut, sunflower or safflower. Grind in mortar and pestle 1 pinch each of celery seeds, black peppercorns corsely.
The oil in the pressure cooker has to be hot so turn on the the burner on to high heat then add either 1 onion or shallot 4 green onions chopped or cut in to half moon slices. It depends on whatever makes you feel comfortable. Cook until slightly brown then add 3 cloves of garlic chopped.
Add the contents of the mortar and pestle, either 1 bullion cube, 3 dashes of seasoned salt or 3 pinches of vegtea seasoning or pink salt, 3 dashes each of maggi or knorr aroma liquid smoke for only if you are making this dish vegetarian or vegan or unsmoked meat if you are using. Omit liquid smoke if using smoked meat.
Add either 1 drop of hot pepper sauce, 1 pinch of red chili powder or 1 chili of any kind desseeded, 1 bag of frozen speckled butter beans or 1/2 bag of dried that has been washed, 1 lb or 1 kg of unsmoked chicken, beef, lamb, goat or veal, smoked turkey or 6 slices of zabiha halal turkey or beef bacon. Vegetarians and vegans can eat it without meat or use 1 package of Morningstar Farms stribbles which is a veggie bacon.
Add 1 liter or 1 quart of water and stir then close the pressure cooker and when the safety button pops up cook for 20 minutes and turn heat off and let the pressure escape. If the beans feel a little hard then put 1 cup of water in the beans and repeat the process.
