Actually this can be easily doubled as a side that requires a creamy cucumber salad. However this is the sauce that is put on gyros. Mr. Riaz knows Greek and he told me tzatziki means cucumber in Greek. This is refresing as my cucumber salad with a vinegarette base if you remember from an earlier post.
You will need 1 to 3 small cucumbers depending on their size. Persian cucumbers are small so if using them the number is 3 and depending on how many people are eating with you. The store they are called pickles for some reason. This gets the tops taken off and discarded. Be very careful that you do not take away too much from the cucumber itself. Cut the cucumber in half vertically lengthwise and then slice the cucumber the same way. they should look like spears. Now cut these spears in a bunch, Lay them horizantally which makes them easier to cut this way and now they are diced.
Add this to a bowl and then mince 1 clove of garlic, 1 onion or shallot finally chopped then add this to the cucumbers, 1 pinch of pink salt, 1 tsp of either lemon or lime juice, 1 1/2 cup of either plain desi yogurt or sour cream, 1 oz of water and mix very well.
Now you have your sauce and I used desi yogurt because it is a lot healthier then sour cream. It was nice and thick enough to put on my gyro. I hope you enjoy it.
