As Minnie Pearl would say HOWDY!!!!!!!!! I have an amazing and cheep dish that would make your mouth water. It is perfect for shoestring budget. In the southern parts of the United States Of America there are lots of people who are not so afluent. Anyway now days there are lots of people all over living above or even below the poverty level thanks to the repugnacants.
Not only is this cheep eats yummy it is also very filling as well and will stick to your ribs and keep you full for a long time. This is the favorite dish of many Hillbillies. Get out that cast iron skillet and add 1/4 cup of cooking oil of choice.
Scrub and dice between 4 to 10 potatoes depending on how many people you are feeding. To dice a potato you cut the potato in to half lengthwise. Cut the halves lengthwise also. They should be half moon slices and please make as small as possible so it doesn’t take a long time to cook at all. Gather these half moon slices and cut across to make tiny cubes and set aside.
Cut 1 onion or shallot in to half moon slices and add to cast iron first in to the hot oil and let brown on high heat. In a mortar and pestle add 1 pinch of black peppercorns and grind in to a coarse powder and add to onion cooking.
Add either 1 pinch of pink salt, seasoned salt or vegtea seasoning. Reduce heat to low and add the potatoes. Stir and add 1 drop of hotsauce. Stir again and place the lid on the potatoes and let them cook for 15 minutes on low or until done. Keep checking in between and if the potatoes are still a little hard let it cook for another 5 to 10 minutes if needed.
Take 2 or more eggs depending on how many people you are feeding and crack it and beat it in a bowl and make sure that it is blended very well. Place this over the potatoes and onion mixture and keep folding until the eggs is well cooked in to the potato mixture.
Turn heat off and for me this is optional because I love vinegar on my potatoes and 2 pinches of any type of herb of choice is the optional part of this dish.
