Mr. Riaz was dodging his cake baking lesson from me and believe me I am not pleased at all and it is one excuse after another and I ended up making my own birthday cake in the microwave because it is so damned hot outside to turn on the oven in my kitchen. He was hell bent on buying me a cake and I said hell no. Every time I eat one of those I end up congested for a good while and I absolutly hate it. First you make this Sugar Free Cream Cheese Icing recipe first and let it sit in the fridge. It will be ready to use after the cake cools.
The cake itself is 2 cups of all purpose unbleached flour, 3 pinches each of cornstarch, unsweetened cocoa powder, baaking powder, 1 pinch of pink salt, powdered red food coloring, 1 egg, 1 cup of buttermilk, 1 drop of alcohol free vanilla essence, either 1/4 cup of agave nectar, sugar free syrup, turbindano sugar or coconut sugar, either 1 tsp of white vinegar, apple cider vinegar, or balsamic vinegar and stir very well by adding buttermilk a little at a time until you have a nice batter and it looks smooth like velvet. Add 3 tbs of oil of avocado, coconut, almond, olive, sunflower, safflower, corn, canola or peanut and mix. some more.
Pour in to either a cake pan or even a cast iron skillet lined with parchment paper and bake at regular oven temp at 375F or 190C for 20 to 30 minutes, or you can put it in a parchment paper lined pyrex dish like I did or put in ramikens. Just be careful not to fill it too high and half way is optimal because it was so damned hot I did not want to be in my own kitchen at all. Aslo you do not want to clean up a messy microwave due to overflow. It is because the cake will rise and you will need ample room. Bake in microwave for 3 minutes, see if it is done then 2 minutes, again check and if need be another 3 minutes in microwave.
There is an instant pot duo crisp method which is put 1 cup of water in to the inner liner, place the trivet and the cake pan filled with batter, hit bake and place the air frying lid and hit start. Also you can make cupcakes from this too and the ramikens can also be placed on the trivet too.

Let it cool completely and frost and decorate it as you wish. The suggestion is using pecan pieces and my twist is edible dried flower pettles. It can be marigold cornflower, jasmine, rose or even lavender.
