Actually this German title for this post is of something very delicious. I put the English translation in parenthisis as you can tell. This to me is a very German dish that actually will melt in your mouth when you eat it and will make your tounge dance for pure joy.
Preheat the oven to 375F or 190C. It was so hot that I did not put this in my oven that I put this in my instant pot instead. You will need 1 veal shoulder roast and I got it big enough where it would fit in to my instant pot even though it was standing up.
Wash Then season the meat first. Grind 1 pinch of black peppercorns in mortar and pestle and sprinkle this on the roast. When you are seasoning, be sure you sprinkle both sides before you cook it. 1 capful of either apple cider or white vinegar, 3 dashes of worcestershire sauce, I pinch of either seasoned salt, vegtea seasoning or pink salt, 1 pinch each of meat tenderizer lemon pepper, mint, thyme, marjarom, sage, parsley, tarragon, rosemary, dill and rub this all over the roast and set aside for a minute.
Either in an instant pot or a roasting pan add 1/4 cup of oil of either peanut, corn, canola, olive, avocado, grapeseed, sunflower or safflower. Add 1 onion or shallot and 3 cloves of garlic gets sauted on high heat on stove and in instant pot. Instant pot users press the saute button and let caramelize on high heat then turn off instant pot’s saute mode and turn heat off from stove and add the roast to roasting pan with vegetables on the top.
The same thing is done for instant pot. Add 1 bay leaf and the vegetables that goes on top of the roast because the meat takes longer to cook then they do. The veggies are 4 stalks of celery, 1 bag of baby carrots or 4 big carrots cut in to large pieces, 4 potatoes scrubbed and quartered.
For roast in the oven be sure to place the roast that is in the roasting pan in the oven and let it cook 1 hour and a half. That is 30 minute incriments until the roast is done. Do the same for instant pot and now choose the slow cook mode for 2 hours. I have checked on this and I was really running out of time and I wanted a hot meal for my family when they got home from work. I turned off the slowcooker mode and selected pressure cook for 20 minutes on my instant pot. When the jingle sounded and it turned off I pressed my quick release button.
After the pressure was gone, I selected the rost option and placed my air fryer lid and selected 12 minutes. The roast was really falling off the bone in the instant pot so I turned it around and again for another 12 minutes.
When it was done I cleaned up my air fryer lid with a clean damp cloth. If you are going to pop your roast in to the oven, you can brown the roast in the roasting pan before sticking it in the oven on stovetop on high heat. This was served with homemade bread rolls that I made earlier that day too.


I like this, because most of my roast are the same. It would be nice to use veal once and awhile. Thanks for the post.
