Actually this is a real favorite of mine and it is very delicious. Here is another story time from my childhood. I was in 8th grade and it was a miserable time in my life when I was picked on by a bunch of kids because I was in an out of group homes from the age of five.
A majority lived at home with their parents and there was several of us kids from the group home that went to this outside school. Sadly one of them that I was cool with died from AIDS. I miss him a lot and one I got in contact with in facebook who was always kind of stuck up blocked me after I told her what happened to this guy we both knew. I did my duty to inform her about what happened to him.
There were also a couple of people I knew from that time and I reached out to her and told her about this one guy passing away from this AIDS virus. I know she is broken hearted like I am because she was friends with him too. She used to come around to see him and miss stuck up who I never got along with. Now I had one counseler in 8th grade and she was in the office of one man who was a head counceler.
One Jewish girl came and talked to me at the counceler’s request. this girl was very nice and from all of the stuff that I went through I was pushing everyone away and I still do because it is a defence mechenisim of protecting myself. I asked her what is her food like and she told me it is kind of bland. One thing she didn’t tell me how delicous potato pancakes are. This I found out for myself .
Take 2 potatoes and cut them in to forths so they are easy to put in to a food processor or easy enough to grate on a grater. Mine isn’t a box it is flat.

I bought this and a rolling pen from a dollar store a long time ago. I bought this about 29 or 30 years ago. Also If you want to do sweet potato pancakes then I suggest you peel these before you quarter and grate them. It is the same amount as the regular potato. Next grate either 1 shallot or 1 onion.
Add 1 pinch of black peppercorns to mortar and pestle grind empty contents, either 1 pinch of kosher salt, pink salt, vetea seasoning or seasoned salt, 1 egg, 1/2 cup each of potato starch and matzo meal, 1/4 cup of water to make a thick batter. Stir until it is completely lump free. It should look almost like a loose dough.
In a cast iron skillet on stovetop add 1/4 cup of cooking oil of corn. canola, vegetable, peanut, grapeseed, avocado, sunflower or safflower. On high heat after the oil gets hot add in batches of 3 1 tbs of the batter and flatten so it can widen. Cover and let cook for 5 minutes on each side. Keep checking on them and when you see they are brown around the edges flip and do the same to the other side. When done remove and place on paper towel lined plate to drain excess oil. Repeat until all of the potato pancake batter is used up. Please do not delay and make this simple yet easy recipe in your own homes and enjoy these yummy things.
