Actually I want to make this post about fried chicken. I don’t use the eggwash because it is too messy and I don’t like pieces of batter in my oil when I am frying. Some even use mayonnaise and then coat with flower. Others use breadcrumbs, cornmeal or even perhaps matzo meal. The choice Is totally yours. If I am going to change my mind and use an eggwash that I would beat one egg and set it aside.
Then I would take I lb or 1 kg of chicken and wash it then add 1 capful of either rice, white cane, balsamic, apple cider, malt, or even tarragon infused. 3 dashes of maggi or knorr aroma, 1 pinch of black peppercorns ground in mortar and pestle then add to chicken, 1 pinch each of thyme, rosemary, sage, basil, oregano, parsley, marjoram, lemon pepper, tarragon,
either 1 bullion cube or 3 dashes of adobo. Goyoa sazonador, seasoned salt, 1 pinch of pink salt or vegtea seasoning which gets spread all over the chicken. Let this rest and then set out 1/4 cup each of what you will need to coat the chicken if you are going to either do eggwash or even use mayonnaise. Dip the pieces of chicken in the eggs and shake off the excess in a bowl or you can use 2 tbs of buttermilk too on the chicken also or 1 tbs of mayonnaise on the chicken itself and rub until it is well coated.
I grew up with someone that used mayonnaise on her fried chicken, after this apply the 1 tbs of either all purpose unbleached flour, cornstarch, arrowroot starch, potato starch and then if you want a crispy then you can add either 2 tbs of cornflakes crushed, cornmeal, breadcrumbs, panko or even mazo meal. This gets sprinkled all over the chicken. Actually I just dusted my chicken with the arrowroot starch and cornstarch, potato starch or all purpose unbleached flower can be used too.
Get out your frying pan on stovetop which I prefer my cast iron skillet and add 1/4 cup of cooking oil of grapeseed, corn canola, sunflower, safflower, vegetable, avocado or peanut. Let it get hot then add the chicken to the oil, cover and fry for 15 minutes, turn using a pair of tongs and keep repeating until the chicken is done. By the way get the oil hot first by turning the heat up to high and then turn the heat down to medium low when you are cooking the chicken.
Now for instant pot and the like first insert the trivet and the round disk on top of this, add 2 cups of water and arrange the seasoned pieces of chicken on top of this. Close the cooker by using the pressure cook lid and select pressure cook and cook for 12 minutes and press quick release button.
Wait for pressure to escape then open the lid and take out the chicken pieces and place them in a bowl. Now save the stock because It is used for our very next post. Take the stock and put it in another pot and wash everything including the condensation collector with soapy water and let it dry. Put the condensation collector in the back of the instant pot itself.
Now it is time to use either buttermilk, eggwash or even mayonnaise if you wish and then coat the chicken with things like arrowroot starch, cornstarch, potato starch or even all purpose unbleached flower and and for crunchy chicken the cornflakes, cornmeal, matzo meal, breadcrumbs or even panko if you wish. Here you do not use as much oil as you would for stovetop. Just add 1 tbs of oil and mix on the chicken by using a spatula or even tongs. Arrange to the fryer basket and then add the disk and place some there too and put the air fryer lid on and select 235F for 12 minutes. If it isn’t done then you can go another 12 minutes if you like but you have to be careful when you are air frying.
When done remove the air frying lid and set it on the protector. This is truely a wonderful device to have in the kitchen and it does a lot without all of that clutter. Now with this out of the way enjoy your meal.
