Actually if you remember the post last time I had smoked something this delicious actually was last week at this time plus I was in a hurry to use my brand new smoking box for the very first time that you can see in the picture at the right side of my grill which is the hottest part because the probe is there that makes it heat up.
This time I used 1 handful of dry chips in there. You can add wet chips too soaked in 1/4 cup of water and drained. It tastes the same that it enables the meat to smoke longer. The chips I used this time was mesquite, I used hickory chips on my very first smoking post and as you seen my first post was chicken and I am showing you how well I did on the quail.
You will need between 4 to 8 depending on now many people are eating with you. Benazir Khan’s Dry Rub is what I used to season it. Actually this made it very flavorful or you can season it however you wish just keep it simple. For my electric grill as high as it would go is on 5 and I placed my smoker box on the right as you can see.
I placed the dome on the grill and waited for the box to smoke with my chips inside and smoke it did and I kept checking on it as I picked up the dome and it was a beauty so I laid a sheet of almuminum foil at the opposite side which is the left side. I then turned the heat down to 2. The lowest my grill will go is 1 but 2 was optimal to me. I sprayed the foil lining my grill with cooking spray and I placed my seasoned quail on it.
Let cook for an hour 1/2 to 2 hours. It is 3 incriments of 30 minutes. It is 3 times 30 and every 15 minutes I would come raise the dome and sprinkle with a tiny bit of water and not a whole lot where you end up putting the fire out or shocking yourself half to death. For those with gas or even charcol grills you cook yours accordingly to the instructions that came with your grill. I am looking forward in to doing more posts like this because this dish is simply amazing. Let rest for 45 minutes when it is finished cooking. simply take the aluminum foil it was cooked on by folding it up around the smoked quail itself to catch its flavor then enjoy when it is done resting. Also you can 3 tbs and coat the smoked quail after smoking then let it rest. This is purely optional.
