By the way This is so yummy that I ended up making a combo of hot and sweet Italian sausage last night and I am not even disappointed at all not one little bit. It can be eaten as a sandwich with thick Italian bread by either Turano or Gonnella with some marinara sauce or even enjoyed with any pasta dish with just marinara or even alfredo.
I decided to smoke this on my electric grill but you can go ahead and use any type of grill you may have. I soaked 1 handful of wood chips this time or it can be added dry to a smoking box too and put on the hottest part of the grill which I turned mine up to 5 so I can lay my smoker box there and closed the lid so it can have a nice smoke.
Take 1 kg or 1 lb of ground beef, lamb. chicken, turkey, veal or goat and put it in a sive and rinse under cold water to remove excess blood. Let it drain and then put 2 slices of whole wheat bread in a toaster and when it is ready take it and crumble it in a large bowl. Crack an egg and alternatively you can add 1 handful of rice flour as a binding agent.
Add 3 pinches of red chili flakes for spicy or 3 pinches of turbinado sugar. I wanted both so I made it both sweet and hot. Add the drained ground meat and 1 pinch each of paprika, oregano, thyme, rosmary, parsley, black peppercorns and sage that has been ground in mortar and pestle, basil oregano, whole fennel seeds, marjoram, 2 cloves of minced garlic, green peppercorns crushed, 3 dashes of balamic vinegar, Add either 1 pinch of kosher salt, pink salt or vegtea seasoning.
Shape in to either patties or logs and place them on the grill lined with aluminum foil. The logs should be a little fat and long like a finger. Cook for 35 minutes on 2 on an electric or gas grill at 15 minute increments then 5 minutes after that and if using charcol grill remove and put in to foil asap and for others turn off grill and then wrap these sausages in the foil and let rest for 30 minutes.
Also if you do not want to smoke your Italian sausage then you can just grill them without a smoker box, This is just a preferance and I really love the smokey flavor. So here’s to you cheers!!!!!
