Actually This recipe came out of a request that a dear friend has asked me to make specifically for her birthday. It is very basic and no frills and very easy. Also it is completely dairy and free from white sugar recipe that is absolutely hard to ignore because it is that moist and delicious.
Dry ingredients are ; because it is such a large batch of brownies are 2 cups of all purpose unbleached flour, 2 pinches of baking powder, 3 tbs of unsweetened cocoa powder, either 1/4 cup of either coconut sugar which I used or turbindano sugar and now starting to go in to the wet ingredients: same amount of either honey, agave nectar or sugar free syrup which are the sweet opions and serves the same purpose as turbindano sugar or coconut sugar.
To this 1 can of coconut milk, 1 egg, 1 cup of water a little at a time and start stirring as soon as you add the coconut milk and the water also until you have a thick batter because some strong turkish coffee has to be added too. Coffee is the link that is posted and you have to brew this and let it cool a little before you add it to the brownie batter. It is 1/4 up of coffee is used and I used the turkish coffee because it is very strong and robust. Add 1 drop of alcohol free vanilla essence and 3 tbs of oil of either olive, flax seed, macadamia nut, corn canola, almond, sunflower, safflower, peanut, corn, canola, coconut, avocado or vegetable.
Turn on regular oven to 400F or 200C and same temp is for instant pot duo crisp and the like Take baking pans and line them with parchment paper and spray with cooking spray or use a cast iron skillets for regular oven only before placing batter in these spray with cooking spray. Pour your batter and place in this oven or instant pot and the like for 20 to 25 minutes. Take either a toothpick or a fork to see if it comes out clean and if it does it means it is done.
Let these brownies cool and enjoy. P.S. btw if you are lactose intolerent or even have a cow’s milk allergy then this is a perfect recipe to enjoy.
