I really loved angel food cake a long time ago. When I gave up white sugar for good I thought it was bye bye to this delectable cake. It can be enjoyed with sauce made from ether fruit or even chocolate. One day I will post one of these recipes when I get around it. For now we are going to contend with another easy recipe. There are several steppes to making a merengue.
- 1. Is by cracking an egg and carefully rock the egg back and forth to seperate the yolk from the. whites. The whites gets put in to one bowl and the yolks gets put in to another and kindly do not mix these two. They are never allowed to mix and the whites is only needed for this type of cake. The yield is from between 4 to 6 eggs. Use the yolks in another recipes such as omlets or even a meatloaf.
2. Liquid egg whites is completely no fuss and this is what I used 1/2 of a pint and all of the work was done for me and I was being just plain lazy.
3. Powdered egg whites can be used too. Just add 1/4 cup of egg white powder and 1 oz of water.
For all 3 methods add 2 pinches of cream of tater and beat on medium to high until the merengue has medium peaks. Add 4 packets of stevia or 1/2 of monk fruit sweetener, 1 pinch of pink salt and and 1 drop of alcohol free vanilla essence. The Pakistani and Indian stores have them. While making the merengue, as you are beating be sure to scape the sides of the bowl and beat some more.
Sift 1/2 cups of all purpose unbleached flour, 3 tbs of cornstarch, Carefully fold in to the merengue and lightly spray the tube pan or other cake pan that is made for instant pot. This is a pot in pot method. Take a pinch or two of all purpose unbleached flour and carefully tap it until the whole entire cake pan is very well dusted. place the trivet in the inner lining and add 1 cup of water and place the angel food batter on top of the trivet. Place the air fryer lid on top and select bake setting the time at 350F or 160C for between 25 to 30 minutes. Test to see if toothpick came out clean then invert to cool. Enjoy with fruit or chocolate sauce of choice or whipped cream
