Actually I really was dying for some homemade cookies and really was jonesing for the yummy aroma that lingers after they are baked. This is the rediscovered joy I have came across after giving up white sugar for ever. Now I am just getting reaquiented with the sugar free counterparts and they are even more amazing because I am not wheezing and short of breath and coughing after I consume these yummy sugar free treats because there isn’t any this refined white sugar pressent in these cookies like they are the regular store bought ones that I have to worry about.
Take 1/2 stick of butter and add to a small mixing bowl. Select 30 seconds after placing it in the microwave and set it out to let it get cool. At least the butter will be melted which makes it a lot easier to work with. Add 1/4 cup of either turbidano sugar or palm sugar, 1 drop of alcohol free vanilla essence which you can buy at any Indian and Pakistani gorcery store. The turbidano sugar and palm sugar can be bought at a regualar grocery store. Just check in the areas where you will find where more people are very self conscience and you will find it. Mix the palm sugar or turbinado sugar, vanilla essence and butter together.
Add 1 egg and mix again. Take 1 pinch each of cocoa powder, pink salt, xantham gum, and either baking powder or baking soda. Stir and add 1/2 cup of all purpose unbleached flour and mix until you have a nice dough. Add either 1 handful of Lilllies white and or dark chocolate chips sweetened with stevia or unsweetened cocao nibs. I found these in Amazon. I want to add if you are low income Amazon will let you buy certain food stuffs with your snap benefits. However you better have a backup method and watch them because they are mighty slick they will pile on charges on your backup card to be overzealous. The coacoa nibs I have found at Cermac which is a regular brick and mortar joint. It is fair trade wich is awesome.
Take 1 sheet of parchment paper and cut it in to 4 equal quadrants. Place on inside the round baking dish and place the the cookie dough on an ungreesed parchment paper lined baking dish for instant pot. Place the trivet and the disk inside the inner lining and place the baking dish with the cookies and attach the air fryer lid and select bake at 350F or 180C for 10 minutes. I did these in batches of 3 and repeated until all of the cookie dough is used up. When the cookies were done, I ended up putting them in a bowl with a tight lid.
However if you don’t have an instant pot and the like then you can use same temp for regular oven and same amount of time too. Mr. Riaz just about demolished these because they were so frightfully good. Enjoy these with hot tea, coffee or even a nice Ice cold glass of milk.
