Actually this is so yummy and not even disappointing at all. It is something I have been wanting to try making for the longest and I have done it. This is very lovely and tasty and I am not at all disappointed at all. Although when I tried it it is very chewy and for those who eat usi which is starch that is served with banga and another Nigerian soup that it is very gummy in consistancy because of the spring roll wrappers I got is rice paper. You can get any type you prefer actually. I got a package of rice paper from Amazon and please use this as your absolute last resort because they have a bunch of 3rd party sellers that will try to rip off people. I have a horrible experience with 3rd party sellers and Amazon does precious little in my humble oppinion. Best bet buy the spring roll wrappers from a brick and mortar like H Mart or other stores that sells Asian groceries.
Any type of canned fish can be used. Just drain either the brine or oil in to a small pot to use as more flavoring for a bag of ramen noodles. You can use 1 can sprats pate, cod livers, sprats, anchovies, tuna, mackeral, salmon, oysters, clams, mussels, squid, octopus, crab or tiny shrimp. place these in a bowl and add 1 tbs each of mayonnaise which acts as a binder, srirracha, 1 tsp either of fish sauce, oyster sauce or 1 dab of either shrimp paste or crab paste, 1 tsp of either dark or light soy sauce, panzu or tamari, 1 pinch of msg, 1 tsp of either black Chinese vinegar, lychee vinegar, rice vinegar or cane vinegar. Add 1 pinch of cliantro, 3 green onions, 2 cloves of garlic, 1 small piece of ginger washed peeled and chopped and added to the fishy mixture and mix well and be sure to mix well.
Next take 1 handful of baby carrots or 2 big carrots, 1 small cucumber and the ones I prefer are the Persian ones, 1/4 of a daikon radish jullienned. This will take some knife work because I got a multi functional vegetable peeler that is supposed to thinly slice and julienne your veggies and I am very disappointed I wasted my money on this piece of rubbish so do not buy it I bought it from Amazon. However I bought a big knife from them that I really love it looks like a meat cleaver and it is very sharp and cuts very well. First cut in half and slice from this and then cut those that you sliced from the half of a vegetable that you made in to slices in half and you got a perfect juilienne. Cut up 1 avocado and smash that and put it aside and this is not for everyone so this is optional. I am the only avocado eater here in my house.
Now take a big pan and place 1/2 gallon or 2 liters of water in it and take a piece of rice paper and submerge it in to the water and do the other side if necessary and place it on the cutting board and take 3 tsps of the filling and 1 tsp of mashed avocado or mushrooms if you prefer plus the julienned vegetables. Make sure it is at the bottom and center then fold the right over then left and then fold from the bottom all the way to the top and you got a nice seal. This little package should be folded and look like a cigar. Then put a piece of parchment paper on the plate and place your finished spring roll on the plate and give it some distance so they do not stick together. From here keep going until all of the filling is used up. Serve this with miso soup or even fried rice dishes and this will go with noodle dishes as well. So here it is enjoy.
P.S. Also you can take 1 can of zabiha halal lunch meat slivered or mashed or 1 lb or 1 kg cooked minced meat like chicken, turkey, beef, lamb, veal or goat in place of the canned fish. For another variation add just a little bit of glass noodles or 1 can of mashed quail eggs drained and mashed with or without zabiha halal lunch meat or canned fish or 2 hard boiled chicken eggs mashed all with or without 1 pinch of seaweed to the actual spring roll itself before wrapping.
